  • 1 teaspoon paprika (optional for a smoky flavor)
  • 1 teaspoon dried oregano or thyme
  • Salt and black pepper to taste
  • Optional: ½ teaspoon chili flakes for some heat

Instructions

1. Prep the Potatoes

  • Wash and scrub the potatoes thoroughly (you can keep the skin on for extra crispiness).
  • Cut each potato into wedges: First, halve the potato lengthwise, then cut each half into 3–4 wedges depending on thickness preference.

2. Soak for Crispiness

  • Soak the wedges in a bowl of cold water for 20–30 minutes to remove excess starch. This helps achieve a crispier texture when baked or fried.
  • Drain and pat them dry with a clean towel.

3. Season the Wedges

  • Preheat your oven to 200°C (400°F).
  • In a large mixing bowl, toss the potato wedges with olive oil, garlic powder, onion powder, paprika, oregano, salt, and pepper. Ensure the wedges are evenly coated.

4. Bake or Air Fry

  • Baking:
    • Arrange the wedges in a single layer on a baking tray lined with parchment paper.
    • Bake for 30–35 minutes, flipping them halfway through, until golden brown and crispy.
  • Air Frying:
    • Place the wedges in the air fryer basket in a single layer (you may need to do this in batches).
    • Air fry at 190°C (375°F) for 15–20 minutes, shaking the basket halfway.

5. Serve
  • Sprinkle freshly chopped parsley on top for a fresh touch.
