- 2 large potatoes, boiled and mashed
- 1 onion, chopped
- 2 cloves garlic, minced

- 1/4 cup vegetable oil

For the pastry:

- 1/4 cup vegetable oil
- 1/2 cup cold water
- 1 egg, beaten (for egg wash)
Instructions:
Make the filling:
1. Heat oil in a pan over medium heat. Add onion and garlic, cook until softened.
2. Add curry powder, cumin, turmeric, and cayenne pepper. Cook for a few seconds until fragrant.
3. Add mashed potatoes and season with salt and pepper. Mix well until combined.
4. Remove from heat and let the filling cool completely.
Make the pastry:
1. In a large bowl, combine flour, salt, and baking powder.
2. Add vegetable oil and mix until the mixture resembles coarse crumbs.
3. Gradually add cold water, mixing until a dough forms.

1. Preheat oven to 400°F (200°C).
2. Place the curry puffs on a baking sheet lined with parchment paper.
3. Bake for 15-20 minutes, or until golden brown.
