Ingredients:For 2–4 servings- 4 cups (1 liter) chicken stock or water
- 2 stalks lemongrass, trimmed and smashed
- 4–5 slices galangal (or ginger as a substitute)
- 4–5 kaffir lime leaves, torn into pieces
- 2–3 Thai chilies, smashed (adjust to taste)
- 1 cup mushrooms (e.g., straw mushrooms or button mushrooms), halved
- 200g shrimp (peeled and deveined) or chicken, thinly sliced
- 2–3 tablespoons fish sauce (adjust to taste)
- 1–2 tablespoons lime juice (adjust to taste)
- 1–2 teaspoons sugar (optional)
- 2–3 tablespoons Tom Yum paste (optional for deeper flavor)
- Fresh cilantro, chopped (for garnish)
Instructions:
1. Prepare the Broth - In a medium-sized pot, bring chicken stock or water to a boil.
- Add smashed lemongrass, galangal slices, kaffir lime leaves, and chilies. Simmer for about 5 minutes to infuse the flavors.
2. Add Mushrooms and Protein - Add the mushrooms and let them cook for 2–3 minutes.
- Add the shrimp (or chicken) and cook until they turn opaque (2–3 minutes for shrimp, longer for chicken).
3. Season the Soup
- Stir in fish sauce, lime juice, and sugar (if using). Adjust the seasoning to balance salty, sour, and slightly sweet flavors.
- If using Tom Yum paste, add it now for a richer flavor.
4. Finish and Garnish - Remove the pot from the heat.
- Garnish with fresh cilantro before serving.
Tips:- Serve immediately while hot, and pair it with steamed rice if desired.
- Feel free to customize with additional vegetables, tofu, or seafood.
