Satay
To make satay (also spelled sate), a popular dish from Southeast Asia, you can follow this simple recipe for chicken satay, one of the most common varieties. The dish consists of marinated, skewered, and grilled meat served with a delicious peanut sauce.
Ingredients:For the Chicken Satay:- 500g (1 lb) boneless chicken breast or thighs, cut into bite-sized pieces
- 2 tbsp soy sauce
- 1 tbsp vegetable oil
- 1 tbsp honey or brown sugar
- 2 cloves garlic, minced
- 1 tbsp lime juice (or lemon juice)
- 1 tbsp grated fresh ginger
- 1 tsp ground coriander (optional)
- 1 tsp turmeric powder
- 1/2 tsp ground cumin (optional)
- 1/4 tsp ground white pepper or black pepper
- Salt to taste
- Wooden skewers (soak them in water for 30 minutes if using wooden skewers)

For the Peanut Sauce:- 1/2 cup creamy peanut butter
- 2 tbsp soy sauce
- 1 tbsp honey or brown sugar
- 1 tbsp lime juice
- 1/2 cup coconut milk (or water)
- 1 tsp chili paste or sambal oelek (optional, for heat)
- 1 garlic clove, minced
- Salt to taste
Instructions:1. Prepare the Marinade:- In a bowl, mix soy sauce, vegetable oil, honey (or brown sugar), garlic, lime juice, grated ginger, turmeric, ground coriander, cumin, white pepper, and salt.
- Add the chicken pieces to the marinade and mix well to coat the chicken.
- Cover the bowl and let it marinate in the fridge for at least 30 minutes, preferably a few hours or overnight for the best flavor.
2. Prepare the Peanut Sauce:- In a saucepan over low heat, combine the peanut butter, soy sauce, honey, lime juice, coconut milk, garlic, and chili paste (if using).
- Stir continuously until the sauce is smooth and heated through. If the sauce is too thick, add a little more coconut milk or water to reach your desired consistency.
- Taste and adjust seasoning with salt or more lime juice if needed.
3. Skewer the Chicken:- Thread the marinated chicken pieces onto the soaked wooden skewers, ensuring they are evenly spaced.
4. Grill the Satay:- Preheat a grill, grill pan, or barbecue to medium-high heat.
- Grill the chicken skewers for about 3-4 minutes per side, or until the chicken is fully cooked and lightly charred on the outside.
5. Serve:- Arrange the grilled chicken satay on a serving plate.
- Serve with the peanut sauce on the side for dipping.
