For Taro and Sweet Potato Balls:

  • Taro: 200g (peeled and diced)
  • Sweet potato: 200g (peeled and diced)
  • Tapioca starch: 100g for each (adjust as needed)
  • Sugar: 2-3 tbsp (optional, to taste)
For the Syrup or Base:

  • Brown sugar syrup: 1 cup of water + 100g brown sugar (adjust to taste)
  • Grass jelly (optional): 1 can or fresh (cut into cubes)
  • Coconut milk (optional): 1 cup

Instructions

Step 1: Prepare Taro and Sweet Potato Balls

1. Steam the taro and sweet potato separately for about 20-25 minutes until soft.
2. Mash each until smooth in separate bowls.
3. Add tapioca starch (gradually) to each bowl. Knead until a dough forms. If the dough is too dry, add a teaspoon of water. If too sticky, add more starch.
4. Roll the dough into long ropes about 1cm in diameter, then cut into bite-sized pieces.
5. Toss the pieces with tapioca starch to prevent sticking.


Step 2: Cook the Balls

1. Boil a pot of water. Add the taro and sweet potato balls.
2. Cook until they float (about 3-5 minutes). Leave them for another 1-2 minutes for a chewier texture.
3. Transfer to a bowl of ice water to cool. This makes them extra chewy.


Step 3: Prepare the Base
  • Brown sugar syrup: Dissolve brown sugar in water over medium heat. Let cool.
  • Optional additions: Prepare grass jelly, coconut milk, or condensed milk.

Step 4: Assemble

1. Drain the taro and sweet potato balls from the ice water.
2. In a serving bowl, combine the balls with grass jelly or sweetened soup.
3. Drizzle with brown sugar syrup, coconut milk, or other toppings like red beans or boba.
4. Serve warm or chilled!
