Scrambled Eggs with Spinach and Parmesan for Breakfast

Ingredients:

- 2 eggs

- salt and freshly ground black pepper

- 1 teaspoon olive oil

- 3 cups baby spinach

- 1–2 tablespoons grated Parmesan


Directions:

1. Whisk eggs in a small bowl

2. season with salt and pepper and set aside.

3. Heat oil in a medium nonstick skillet over medium.

4. Add spinach and cook, tossing, until wilted, about 1 minute.

5. Add eggs, cook, stirring occasionally,  about 1 minute. Stir in Parmesan.
