  • 4 salmon fillets (skin-on or skinless)
  • 1 tablespoon oil (vegetable or sesame)

For the Teriyaki Sauce:
  • 1/4 cup soy sauce
  • 2 tablespoons mirin (Japanese sweet rice wine) or substitute with honey/maple syrup
  • 2 tablespoons sake (optional, can substitute with more mirin or water)

  • 1 teaspoon minced garlic (optional)
  • 1 teaspoon minced ginger (optional)
  • 1 teaspoon cornstarch mixed with 2 teaspoons water (optional, for thickening)

For Garnish:
  • Sesame seeds
  • Chopped green onions

Instructions

Step 1: Prepare the Sauce

1. In a small bowl, mix soy sauce, mirin, sake (if using), brown sugar, garlic, and ginger.
2. Heat the mixture in a small saucepan over medium heat, stirring until the sugar dissolves.
3. (Optional) If you want a thicker sauce, add the cornstarch slurry and simmer until it thickens. Remove from heat and set aside.

Step 2: Cook the Salmon

1. Pat the salmon fillets dry with a paper towel and season with salt and pepper.
2. Pat the salmon fillets dry with a paper towel and season with salt and pepper.
3. Place the salmon fillets skin-side down (if using skin-on) and sear for 3–4 minutes, or until the skin is crispy.
4. Flip the fillets and cook the other side for another 2–3 minutes, or until the salmon is cooked to your desired doneness.

Step 3: Glaze with Teriyaki Sauce

1. Reduce the heat to low and pour the teriyaki sauce over the salmon.
2. Spoon the sauce over the salmon as it cooks for about 1–2 minutes to allow it to glaze the fish.

Step 4: Serve

1. Transfer the salmon to a plate and drizzle any remaining sauce from the pan on top.
2. Garnish with sesame seeds and green onions.
3. Serve with steamed rice and sautéed vegetables for a complete meal.

Enjoy your homemade salmon teriyaki! 🍣
