Shawarma is a delicious Middle Eastern dish made with marinated meat, often wrapped in flatbread like pita, along with vegetables and a flavorful sauce. Here's a simple recipe to make chicken shawarma at home:


Ingredients

For the Marinade:

  • 1 kg boneless chicken thighs or breasts, sliced
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1 teaspoon smoked paprika (optional)
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper

For the Sauce:

  • ½ cup plain yogurt or tahini
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • Salt to taste

For the Wrap:

  • 6 large pita breads or flatbreads
  • 1 cup chopped lettuce
  • 1 cup diced tomatoes
  • ½ cup sliced cucumbers
  • Pickled vegetables (optional, e.g., pickled turnips or cucumbers)
  • Sliced onions (optional)

Instructions

1. Marinate the Chicken:

  1. In a large bowl, combine olive oil, lemon juice, garlic, and all the spices for the marinade.
  2. Add the chicken slices and mix well until all pieces are coated. Cover and refrigerate for at least 1 hour (preferably overnight for best flavor).

2. Cook the Chicken:

  • Option 1: Pan-Fry
    Heat a large skillet or grill pan over medium-high heat. Add the marinated chicken and cook for 4–6 minutes per side until browned and cooked through.

  • Option 2: Oven-Bake
    Preheat your oven to 200°C (400°F). Place the marinated chicken on a baking sheet and bake for 25–30 minutes, flipping halfway through.

  • Option 3: Grill
    Cook the chicken on an outdoor grill over medium-high heat for about 6–8 minutes per side.

3. Prepare the Sauce:

  1. In a small bowl, mix yogurt, mayonnaise, lemon juice, minced garlic, and salt. Adjust seasoning to taste. Chill until ready to use.

4. Assemble the Shawarma:

  1. Warm the pita bread or flatbread on a skillet or grill.
  2. Spread a layer of the sauce on the bread.
  3. Add the cooked chicken, lettuce, tomatoes, cucumbers, pickled vegetables, and onions.
  4. Drizzle more sauce over the filling.

5. Serve:

Roll the shawarma tightly into a wrap, and enjoy! You can also cut it in half for easier handling.
