Shawarma
Shawarma is a delicious Middle Eastern dish made with marinated meat, often wrapped in flatbread like pita, along with vegetables and a flavorful sauce. Here's a simple recipe to make chicken shawarma at home:
IngredientsFor the Marinade:- 1 kg boneless chicken thighs or breasts, sliced
- 3 tablespoons olive oil
- 1 tablespoon lemon juice
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1 teaspoon ground turmeric
- 1 teaspoon ground cinnamon
- 1 teaspoon smoked paprika (optional)
- 1 teaspoon salt
- ½ teaspoon ground black pepper
For the Sauce:- ½ cup plain yogurt or tahini
- 2 tablespoons mayonnaise
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- Salt to taste
For the Wrap:- 6 large pita breads or flatbreads
- 1 cup chopped lettuce
- 1 cup diced tomatoes
- ½ cup sliced cucumbers
- Pickled vegetables (optional, e.g., pickled turnips or cucumbers)
- Sliced onions (optional)
Instructions1. Marinate the Chicken:- In a large bowl, combine olive oil, lemon juice, garlic, and all the spices for the marinade.
- Add the chicken slices and mix well until all pieces are coated. Cover and refrigerate for at least 1 hour (preferably overnight for best flavor).
2. Cook the Chicken:Option 1: Pan-Fry Heat a large skillet or grill pan over medium-high heat. Add the marinated chicken and cook for 4–6 minutes per side until browned and cooked through. Option 2: Oven-Bake Preheat your oven to 200°C (400°F). Place the marinated chicken on a baking sheet and bake for 25–30 minutes, flipping halfway through. Option 3: Grill Cook the chicken on an outdoor grill over medium-high heat for about 6–8 minutes per side.
3. Prepare the Sauce:- In a small bowl, mix yogurt, mayonnaise, lemon juice, minced garlic, and salt. Adjust seasoning to taste. Chill until ready to use.
4. Assemble the Shawarma:- Warm the pita bread or flatbread on a skillet or grill.
- Spread a layer of the sauce on the bread.
- Add the cooked chicken, lettuce, tomatoes, cucumbers, pickled vegetables, and onions.
- Drizzle more sauce over the filling.
5. Serve:Roll the shawarma tightly into a wrap, and enjoy! You can also cut it in half for easier handling.
