Here's a simple recipe to make a rich and gooey lava cake at home:

Ingredients (Makes 4 cakes):

  • 4 oz (115 g) semi-sweet chocolate (chopped or chips)
  • 1/2 cup (115 g) unsalted butter (plus extra for greasing)
  • 1 cup (120 g) powdered sugar
  • 2 large eggs
  • 2 large egg yolks
  • 6 tbsp (50 g) all-purpose flour
  • 1/4 tsp vanilla extract (optional)
  • A pinch of salt


Instructions:


1. Preheat Oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust them lightly with cocoa powder or flour to prevent sticking.

2. Melt Chocolate and Butter

In a heatproof bowl, melt the chocolate and butter together. You can do this in a microwave in 20-30 second intervals, stirring between each, or using a double boiler. Let it cool slightly.

3. Mix Sugar, Eggs, and Yolks

In a medium bowl, whisk together the powdered sugar, eggs, and egg yolks until smooth.

4. Combine with Chocolate Mixture

Gradually pour the melted chocolate into the sugar and egg mixture, stirring continuously to prevent the eggs from cooking.

5. Add Flour, Salt, and Vanilla

Gently fold in the flour, salt, and vanilla extract (if using) until the batter is smooth and well combined.

6. Fill Ramekins

Divide the batter evenly among the prepared ramekins.

7. Bake

Place the ramekins on a baking sheet and bake for 12-14 minutes, or until the edges are firm but the centers are still soft. The tops should look set but not overdone.

8. Rest and Serve

Let the cakes rest for 1-2 minutes. Carefully run a knife around the edges to loosen, then invert the cakes onto plates.
